Winemaking
After harvesting, the grapes arrive at a mechanical sorting table, where all green waste (leaves, stalks, snails, etc.) is removed. Once cleaned, the harvest is pumped into thermo-regulated cement tanks.
Once in the vat, we rack a few juices (saignée) to improve quality and concentrate fruit, aromas, tannins and color.
Each vinification is adapted to the specificity of the vintage with the sole objective of obtaining the best from the fruit.
