Winemaking
After harvesting, the grapes arrive at a mechanical sorting table, where all green waste (leaves, stalks, snails, etc.) is removed. Once cleaned, the harvest is gravity-fed to thermo-regulated cement tanks.
Once in the vat, we rack a few juices (saignée) to improve quality and concentrate fruit, aromas, tannins and color.
Each vinification is adapted to the specificity of the vintage, with the sole aim of getting the best out of the fruit.
